Simple Pepper Salad

3 to 4 red and yellow sweet bell peppers
3 fresh cooked artichokes hearts, or well drained jarred artichoke hearts
1 tsp lemon zest
1 tsp thyme

Vinaigrette

1 crushed clove garlic
1 Tbs red wine vinegar
Cup extra virgin olive oil
salt
ground pepper

Julienne the bell peppers and place in a large mixing bowl. Quarter the Artichoke hearts and add to the bowl. Mix in the lemon zest, and thyme.

In a separate bowl blend the garlic, vinegar, and olive oil. Add the salt and pepper to taste. Pour the vinaigrette over the salad and toss.
